Among its many traditions, <em>Nowruz sweets<\/em> hold a special place \u2014 they are a symbol of hospitality and renewal.<br>In this article, we\u2019ll explore the history and preparation of several traditional Nowruz pastries that have graced Iranian tables for centuries.<\/p><div style=\"height:52px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div><hr class=\"wp-block-separator has-alpha-channel-opacity\"\/><div style=\"height:56px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div><h3 class=\"wp-block-heading\"><strong>History of Nowruz Sweets<\/strong><\/h3><p>The tradition of baking and sharing sweets during Nowruz dates back hundreds of years. In ancient Persia, people made sweet treats for spring festivities and exchanged them as gifts. This custom has endured through time, and today, various kinds of traditional sweets are still prepared for Nowruz.<\/p><p>During the Achaemenid and Sassanid eras, special ingredients were used for Nowruz celebrations, with sweets being a key element. Back then, sweet foods were typically made with honey, flour, and nuts.<br>In the Safavid period, with the introduction of sugar and wider access to aromatic spices, more diverse pastry recipes emerged. Nan-e Berenji (Rice Flour Cookies)<\/strong><\/h4><p><strong>Ingredients:<\/strong><\/p><ul class=\"wp-block-list\"><li>Fine rice flour \u2013 250 g<\/li>\n\n<li>Powdered sugar (sifted) \u2013 125 g<\/li>\n\n<li>Solid shortening or butter \u2013 125 g<\/li>\n\n<li>Egg yolk \u2013 1<\/li>\n\n<li>Rosewater \u2013 25 ml (2 tbsp)<\/li>\n\n<li>Brewed saffron \u2013 5 ml (1 tsp)<\/li>\n\n<li>Ground cardamom \u2013 1 tsp<\/li>\n\n<li>Poppy seeds (for garnish) \u2013 as needed<\/li><\/ul><p><strong>Instructions:<\/strong><\/p><ol class=\"wp-block-list\"><li>Beat the butter and powdered sugar with a whisk or mixer for 5 minutes until light and creamy.<\/li>\n\n<li>Add the egg yolk and beat for another 2 minutes.<\/li>\n\n<li>Stir in the rosewater, saffron, and cardamom.<\/li>\n\n<li>Gradually add the rice flour and mix with a spatula or by hand until a smooth dough forms.<\/li>\n\n<li>Wrap the dough in plastic wrap and refrigerate for 12 hours.<\/li>\n\n<li>Preheat the oven to 160\u00b0C (320\u00b0F).<\/li>\n\n<li>Shape the dough into 10 g balls and place them on a greased baking tray.<\/li>\n\n<li>Sprinkle with poppy seeds and bake for 15 minutes.<\/li>\n\n<li>Let them cool completely before storing in an airtight container.<\/li><\/ol><div style=\"height:50px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div><hr class=\"wp-block-separator has-alpha-channel-opacity\"\/><div style=\"height:56px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div><h4 class=\"wp-block-heading\"><strong>2.
